The service was decent and the wait staff were friendly enough. Unfortunately some of the food was terrible, we had the full-rack ribs which were bone dry and hard to eat without asking for extra sauce, the wagyu rump steak was good and cooked as requested but the additional sides coleslaw and calamari topper were not great. The calamari was more flower and bread crumbs than anything, it was like deep fried bread. We had the garlic bread which was really good and a couple of cocktails, they were creative and delicious. When the waitress came to ask how our meal was after we had finished we told her it was a little dry she said please let them know when paying for the bill. When we went up to pay for the bill, the cashier asked how the food was so we told him the ribs were a little dry. He replied with a variety of statements mainly saying he can’t change the bill. I stated that’s fine it is and he got irritated and said we should’ve told them when the meals first came out, but nobody came to confirm the meal was okay… I wasn’t asking or searching for a discount, more just a nice time and meal with my friends. We spent $305.66 for 3 people some of it was worth it. To sum up, don’t order calamari, or full back ribs it will only lead to disappointment. Please consider the cocktails and garlic bread. We had the table reserved at courtyard area so we can enjoy the view at late afternoon on The Esplanade. Great hospitality, we had the sichimi deep fried calamari as the starter and the steak is cooked beautifully. We were quite full and the creme brûlée as recommended by others will be reserved for our next visit. Thanks. Absolutely phenomenal. The food here is consistently outstanding, but the ribs are on another level! fall-off-the-bone, packed with flavour, easily the best I’ve had in Cairns. The steaks, cocktails, entrées and desserts are all 10/10, but the ribs genuinely steal the show. Five stars without question. Will be back regularly until there is a restraining order against me!

I really enjoyed a lunch at Copper. It's almost out of place on the waterfront because there's some serious skill in the kitchen. I was in the mood for simple. My medium rare eye fillet was delicious and tender. The BBQ basting added a complexity and the red wine jus was great. The star of the show was probably with mash. Excellent. I'll probably pop back and try more of the menu now that I know the Chef knows his business.
